Now that I’ve pretty much caught up on reading my blogging buddies’ blogs I feel like I can post again. We’ve been having a busy summer 🙂
As I shared in my early July post Little More on the “Agriculture Report” and Al Fresco Dining, we’ve been enjoying dining outside a lot during the warm weather.

Yesterday we had a super delicious meal on the upstairs deck that I want to share the recipe with you.
Baked Feta, Tomatoes and Pasta (Denver Post version):
Once plated the dish we topped it with a little fresh parmesan for an extra boost.
It is very easy to make and I was able to use fresh basil from my garden. If you have a better growing season where you like than we have in Colorado, you might be able to use tomatoes from your garden too.
John made fresh pasta (he has mastered pasta making…as much as an American can…he daydreams someday of going to Italy and attending one of those “learn pasta making with an Italian grandmother”workshops we’ve seen advertised) for the dish. According to this chart below, he made Tagliatelle:

Warning: this dish requires you to turn on your oven and you might not want to do it in the summer heat. This dish is fun to enjoy in other seasons too 🙂

Postscript
This past weekend my brother and sister and my nephews met up in Baltimore, Maryland to hang out and go see the new Superman movie. I sure wish I lived close enough to join them (but I love Colorado so much!).
Thought I would share this sweet selfie they sent me with the four of them together. I love my family so much!!!



Yum! I’ve been trying to perfect a broccoli pasta salad with lemon and ricotta as the dressing. So far, it’s been pretty tasty. And… no oven!!!

That looks very tasty! We have a long tomato season, so I roast trays of tomatoes, olive oil and herbs in the oven when it’s a little cooler, then freeze the result, so I can eat roasted tomatoes on the hottest and coolest days. It’d probably work for this sauce too.

Thank you and I envy your long tomato season sounds like you have a bountiful harvest! Ah – I now wonder if the sauce could be frozen as we always have too much (we usually share with John’s father who lives a mile from us) and it would be nice to save it for another time!

I think it should freeze well; there’s enough fat in it to prevent it getting too icy.

Hi Tierney, the pasta dish does look like it came out great – and how cool that John has mastered pasta making – my mother made homemade egg noodles and I would eventually like to try – because store-bought pasta actually makes me sick. It could be the GMO ingredients (but even the Annie’s brand, which is supposed to be good and my nieces enjoy – I cannot handle). We were making zucchinni noodles (had a little machine that made the zoodles). And I did not know they offered those past workshops in Italy – but how wonderful is that!
Cheers to fresh basil. That is one of the few things I try to grow each year – and we make pesto and then freeze it. The supply lasts through the winter – and we give some away because we only need so much pesto.

Thanks for stopping by and I love homemade pesto and try to make it too! I usually have too much too and end up tossing some of it that looks freezer burn! I hope you get to try making the pasta there are lots of great YouTube videos (how John teaches himself most things) and if you have a Kitcheaide mixer get the pasta attachment and you will be set!
